French toast cookies are definitely a thing, and I promise you, this is a recipe you need to try! If I could describe the flavor, imagine a milder version of a snickerdoodle. These cookies are sweet but not overly sweet, so if you're worried about your sugar intake, you'll be perfectly fine. So, give French toast cookies a try!
I made snickerdoodles one day and my youngest loves pancake syrup. He took a couple of cookies and poured syrup on them and enjoyed them. So when I used the dad tax to grab a bite, I found out that it was delicious! I made a few adjustments to the cookie recipe focusing more on a lighter cinnamon sugar taste and voila! That’s when I decided to create these French toast cookies.
You can even take it up a notch by adding cinnamon sugar to the finished product and torching the sugar too for an added crunchy texture!

Looking for a sweet treat with a hint of nostalgia to it? Try these French Toast cookies! They're packed with cinnamon sugar goodness and make the perfect snack!
