These cookies are sweet but not overly sweet, so if you’re worried about your sugar intake, you’ll be perfectly fine. So, give French toast cookies a try!
The “origin” of this French toast cookies recipe
I made snickerdoodles one day and my youngest loves pancake syrup. He took a couple of cookies and poured syrup on them and enjoyed them. So when I used the dad tax to grab a bite, I found out that it was delicious! I made a few adjustments to the cookie recipe focusing more on a lighter cinnamon sugar taste and voila! That’s when I decided to create these French toast cookies.
You can even take it up a notch by adding cinnamon sugar to the finished product and torching the sugar too for an added crunchy texture!

- They can be topped with anything sweet! Pancake syrup is great for it too. You can make a simple frosting or even torch the sugar for added flavor, much like French toast cookies.

- All purpose flour
- Butter
- Granulated sugar
- Eggs
- Vanilla extract
- Baking soda
- Salt
- Ground cinnamon
- Nutmeg
- Although not a requirement, I would highly recommend letting the cookies chill for a couple of hours before baking. This recipe is designed to make the cookies immediately. However, like any cookie, I find it helps the flavor and texture of cookies to chill for a while. This is especially true for French toast cookies.

For the Cinnamon Sugar

To a large bowl, sift in your flour. Add in the baking soda, salt, cinnamon, and nutmeg. Whisk until well combined.

In a large mixing bowl, add the room temperature butter and sugar.

Cream the softened butter and sugar until light and smooth.

Add in your eggs one at a time before adding the vanilla extract.

Let the dough chill for about two hours. This will allow the cookies to form better when baking.

Preheat your oven to 350 degrees.

Line up baking sheets with parchment paper or a silicone baking mat.

Use an ice cream scoop to shape your cookies or roll into about 1 inch balls.

Bake for 10-12 minutes or until the edges turn brown.

In a flat container, add the cinnamon and the sugar.

Mix to make cinnamon sugar.

Place the cookies on a wire rack to cool.

While they're still warm, add the cinnamon sugar to the top.
