Notes

  • If you're having a hard time removing the peanut butter from your measuring cup, spray the cup with a bit of cooking spray. This should allow the peanut butter to slide right off.
  • For the best results in making your peanut butter and jelly cookies, I would recommend chilling the dough for at least an hour. While you can make the cookies as is when mixed, chilling the dough allows it to firm a bit more and not flatten out as much when baking.
  • The sweet spot for this recipe (for me) was 14 minutes but I would say bake for 10 minutes and then monitor until the edges get darker.
  • Once baked, let the peanut butter jelly cookies cool for at least 20 minutes. They will come out soft still and will properly form once placed on a baking rack.

  • 1 stick softened unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp 1-2 vanilla extract
