Notes

  • If you’re having a hard time removing the peanut butter from your measuring cup, spray the cup with a bit of cooking spray. This should allow the peanut butter to slide right off.

  1. In a large bowl, beat the butter, sugars, and peanut butter.
  2. In a separate bowl, whisk your dry ingredients (flour, salt, baking powder, and baking soda).
  3. Place the dry ingredients bowl to the side.
  4. Once the butters and sugar are smooth, add your egg and vanilla extract.
  5. Gradually add in the dry ingredients, mixing until well combined.
  6. Be sure to use a plastic spatula to scrape the sides.
  7. Cover and chill the dough for at least an hour.
  8. Preheat your oven to 375 degrees.
  9. Grab a baking sheet lined with parchment paper.
  10. Form your cookies into one inch balls.
  11. Use a spoon or thumb to leave a circular print into the center of your cookies.
  12. Place a tbsp of jam in the center.
  13. Once all of your cookies are formed, bake for 10-14 minutes, or until the edges brown.
  14. Place on a wire rack and cool for 20 minutes.
  15. Serve with some milk and enjoy!
