Lasagna soup is an iconic dish that needs no introduction. The combination of hearty meat, tomatoes, and cheese make this the perfect comforting dish for those cold winter nights!

Social media has made this trending recipe a must have over the last few years. In fact, this is arguably one of the most viral recipes ever! This recipe takes it to the next level combining the familiar flavors of chicken alfredo with the classic lasagna.

I love the substitution of a cream based sauce over the rich tomato flavor. This is a dish I usually make around the fall/winter months and I make a large batch with the intention of having enough for a few days. Let’s just say it barely makes it past day one, that’s how good it is!

  • The addition of chicken alfredo– Lasagna soup in itself is a next level dish. This version substitutes the familiar tomato baste flavor for a cream based sauce. I’d argue in saying this is way better than the original!
  • The addition of broccoli– As an adult, why aren’t you eating your vegetables? Seriously! Like any chicken alfredo dish, adding broccoli takes it up a notch and gives the dish some healthy hearty crunch!
  • The choice of chicken– This goes well with chicken breast or thighs. The original recipe called for breasts since that was all I had in the kitchen at the time. But thighs will give you a juicier bite, so if you want a preference, I’d recommend using thighs.

  • Lasagna Noodles
  • Baby Bella Mushrooms
  • Heavy Cream
  • Cheese- Mozzarella and Parmesan are all you need!
  • Seasonings- Salt, pepper, garlic & onion powder, and Italian seasoning.

  • Cook the dish in one pan. This allows you to build the flavor with the fond that comes from the ingredients.
  • Make sure you cut the heat off before adding the cheese. The residual heat will melt the cheese without scolding it in the pot.

Instructions

  1. In a small bowl, add your ricotta cheese, Parmesan, and seasonings. Fold over and refrigerate until ready to serve.
  2. Season your cubed chicken breast with salt, pepper, garlic and onion powder, complete seasoning, cayenne pepper, and Italian seasoning. Mix until well combined.
  3. Add avocado oil to your Dutch oven or pot.
  4. Add the chicken and cook 80% of the way.
  5. Remove from the pan and add the onions and mushrooms.
  6. Cook for about three minutes seasoning with salt and pepper to taste.
  7. Add cooking wine to deglaze.
  8. Add the chicken back to the pot and mix.
  9. Add the flour, chicken stock, roasted garlic paste, and heavy cream.
  10. Add adobo, all purpose seasoning, lasagna noodles, and broccoli.
  11. Put a lid on the pot and cook, stirring repeatedly until the noodles soften.
  12. Add Parmesan and mozzarella cheese.
  13. Add to a bowl and serve with the ricotta mix.
  14. Enjoy!!!!
