Prep the Chicken

Pat chicken wings dry with paper towels. In a large bowl, season with salt, pepper, garlic powder, onion powder, paprika, cayenne, Old Bay, complete seasoning, and Italian seasoning. Add mustard and massage in until well combined.

Dredge the Chicken

In another bowl, mix flour and Lefty’s Chicken Fry seasoning. Dredge each wing in the flour mixture, pressing lightly to ensure it sticks. Place dredged wings on a wire rack and let them rest for 10–15 minutes to let the flour hydrate the chicken wings.

Infuse the Oil

Heat oil in a deep pot or fryer to 350°F. Add the unsalted butter, some of the sliced onions, and some of the halved jalapeños. This will slightly bring the temperature down a bit. Once it gets back up to 350, add the chicken wings.

Fry the Chicken

Carefully add the wings in batches. Fry each batch for 8–10 minutes or until golden brown, crispy, and cooked through. Avoid overcrowding the pot. The chicken should reach a temp of 165 degrees internally to be fully cooked. Continue the process of adding the peppers, onions, and chicken until all of your batches are done.
