  • Shrimp (peeled and deveined). How you cook them is your preference. You can cook them whole and chop them afterward, but I find it easier and less time consuming to chop the shrimp up, season, and cook.
  • Olive oil (any oil to pan fry will do, but olive oil gives the recipe more flavor. You can also use butter if you’d like).
  • Bell peppers

  • Black pepper
  • Garlic powder
  • Onion powder
  • Cajun seasoning
  • Garlic paste
  • Cream cheese
  • Cheddar Cheese (Any cheese you’d like to use is fine. I think cheddar gives the dish more richness personally)

  1. Preheat your oven to 350 degrees.
  2. In a skillet over medium heat, add olive oil, then sauté red and green bell peppers and onion until softened (about 4–5 minutes).
  3. Add chopped shrimp to the skillet. Season with Cajun seasoning, black pepper, garlic powder, onion powder, and garlic paste. Cook until shrimp are pink and fully cooked (about 3–4 minutes).
  4. Reduce heat to low. Stir in cream cheese until melted and creamy.
  5. Addd half of the shredded cheddar and pepper jack cheeses. Stir until melted and combined.
  6. Transfer dip to an oven-safe dish, sprinkle remaining cheese on top, and broil until bubbly and golden.
  7. Sprinkle with sliced scallions and serve hot with chips, crackers, or bread.
