Slice chicken breasts into even strips, about 1 inch wide. Pat dry with paper towels.

In a bowl, whisk together 1 egg with about ½ cup of water, and the Lefty's seasoning until smooth.

In a large bowl or shallow dish, combine flour, and then half of the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, all-purpose seasoning, and cornstarch (or baking powder).
