Let the strawberries sit at room temperature for an hour. This will allow them to macerate (release their natural juices).

Bring the mixture to a boil, stirring frequently. Reduce the heat and simmer for 25–30 minutes, continuing to stir and mash the strawberries gently with a spoon.
