Shrimp Ceviche is such a delicious dish! I love the cool, spicy, acidic taste of the shrimp and the refreshing crunch of the beautifully colored vegetables!

It’s the perfect dish for those days you don’t feel like cooking. I can make this dish any time of the year and never tire of it.

In fact, the first time I had this recipe was on a day I didn’t feel like cooking. I went out to a local Mexican restaurant and tried this recipe. It was so delicious, acidic, and fresh that it became an instant favorite!

  • This is one of those recipes that you can use raw or cooked shrimp. If you use raw shrimp, follow the steps to a tee as the acidity will cook the shrimp over time.
  • Fresh ingredients- I love this recipe for the fresh vegetables. The crunch from the peppers and onions, the soft tomatoes, the juicy shrimp come together beautifully for one amazing bite.
  • The longer it marinates, the deeper the flavor.

  • Shrimp (Can use raw or cooked shrimp)
  • Vegetables (cucumber, onions, peppers, tomatoes)
  • Fresh Lemon Juice (This is what “cooks” the shrimp)

  • Once you get the ingredients to come together, let it sit overnight covered in the fridge. In addition to increasing the “cook” time, the flavors come together and develop more flavor.
  • You can serve this with just about anything! Here are some of my recommendations below.
    • Tortilla chips
    • Tostadas
    • Tostones
    • Toasted Baguettes
    • Crackers

  • You can store your leftovers in the fridge for up to one day.

Instructions

  1. Place your cleaned shrimp in a bowl.
  2. Add the juice from the lemons and limes to the shrimp.
  3. Cover and refrigerate for at least two hours.
  4. While that’s refrigerating, add your diced vegetables to a bowl.
  5. In a large bowl, add the shrimp with the citrus juice, the diced vegetables, cilantro, seasonings, and olive oil and mix.
  6. Refrigerate for at least two more hours to allow the flavor to develop or overnight for best results.
