These homemade breakfast burritos are perfect to make ahead for meal prep! It may be surprising, but several years ago, I was close to 500 pounds! Crazy right? I had a hard time losing weight and finding recipes to help my goals.

One of the hardest realizations for weight loss is that temptation gets the best of us. I believe in moderation, but I also believe you can enjoy your favorite foods without compromising taste. This is one of those recipes that not only helped me to lose weight but it didn’t compromise on taste. 

I make these ahead of time to fuel my post workout routine. I substitute some ingredients to make these burritos healthier. Instead of using sour cream, I use non-fat Greek Yogurt to increase the amount protein in this dish. Adding it to your eggs helps with the flavor and makes for a fluffier texture. You can also store these homemade breakfast burritos in the fridge for up to five days or in the freezer for up to three months!

They're packed with fluffy scrambled eggs, and can be made with savory turkey sausage, ground chicken, or whatever protein you see fit! Whether you're looking for a hearty breakfast on-the-go or a wholesome family dish, this breakfast burrito will keep you energized all morning long!

Instructions

  1. Season your diced potatoes with all purpose seasoning and cayenne pepper.
  2. Coat the potatoes with your cooking spray and bake at 400 for 30-35 minutes.
  3. In a large pan, add cooking spray and once it’s hot, add the ground chicken.
  4. Once cooked, add garlic and onion powder, cayenne pepper, salt, and pepper. Mix it in until well combined.
  5. Whisk six eggs into a bowl combining with Greek yogurt.
  6. Heat a pan on medium low heat.
  7. Add the eggs and slowly stir to get them to fluff up.
  8. Once the eggs are cooked, mix in with the potatoes, ground chicken, and butter.
  9. Assemble your burritos.
  10. Toast to your desired liking.
  11. Serve immediately.

  • This recipe will call for more short rib/oxtail than the actual dough. I usually use the leftovers for tacos, burritos, or right over rice!
  • If you cannot find scotch bonnet peppers, use habanero peppers as a substitute. 
  • After cooking, wait for at least 5 minutes as the filling will be piping hot!
