
A sweet and spicy take on the buffalo chicken classic
I love crispy Peruvian chicken wontons! They’re the perfect appetizer! Unlike buffalo chicken wontons, these bold bites of flavor excite the palate with sweetness and a hint of spice. While they are made within the same vein of buffalo chicken dip, a few key ingredient swaps make all the difference with this delicious recipe.
Crispy Peruvian Chicken Wontons: It’s all in the marinade
One of my most popular recipes that I made (not just on social media but with my family) last year was my Peruvian roasted chicken. The flavor was to die for! It only made sense to take some of those same flavors and incorporate them into an appetizer, specifically using chicken wontons.
Paired with the aji verde ranch, this recipe gets taken to the next level! If you don’t know, aji verde takes the flavors of cilantro, mayo, lime, and cotija cheese and emulsifies it into a beautiful sauce. Making it into a ranch sauce was just genius on my part (don’t mean to brag but it was)!

- Chicken Thighs
- Brown Sugar
- Soy Sauce
- Seasonings
- Limes
- An hour marinade is minimal, but for best results, let it sit in the fridge overnight.
- You could use any kind of chicken for this. I prefer chicken thighs or even getting a pre-packaged rotisserie chicken from the grocery store and just breaking it apart. Breasts are fine, but they may be a bit on the dry side
- Do not overfill the wontons. A tbsp is more than enough to fill.

How to Make Crispy Peruvian Chicken Wontons
Description
Take your appetizer experience to the next level with these Peruvian chicken wontons! The explosive flavor paired with the aji verde ranch equals a party in your mouth for sure.
Ingredients
Marinade for the chicken
For the chicken filling
Instructions

To a large bowl, add your diced chicken thighs as well as all of the marinade ingredients.

Let it sit in the fridge covered for an hour.

Heat a cast iron or skillet on medium heat.

Add your oil to the pan once heated.

Add the chicken thighs and cook for about 7-10 minutes or until the chicken reaches an internal temperature of 165 degrees.

Let the chicken cool completely.

Once cooled, add the chicken to a bowl.

Add the buffalo sauce, cream cheese, pepper jack cheese, and soy sauce.

Mix until well combined.

Take each wonton wrapper and coat the edges with cold water. You can use a pastry brush or your finger to do this step.

Add a tbsp of filling to the center.

Fold the inner edges of the wonton into itself, then crimp the sides to form your wonton shape (see the screenshots and video on the main recipe page for details).

Once all of your wontons are formed, add oil to a heavy bottom pan.

Once the temperature reaches 350 degrees, fry your wontons.

The wontons should take no longer than 5-7 minutes to cook.

Once they are golden brown and crispy, remove and let it sit on a wire rack to drain off any excess oil.

Serve with your aji verde ranch and enjoy!
